Vegetarian Frittata

Ingredients:

Sliced broccoli, zucchini and capsicum or your favorite soft vegetables. two or three. Totalling approximately 400g. 1 Diced onion
2 thickly sliced tomatoes
8 eggs well beaten
1 cup milk
½ cup of fresh basil and thyme. And seasoning to taste.

Directions:

  1. Preheat oven 170c. Lightly grease a 20cm ovenproof flan dish with a little olive oil.
  2. In a large bowl whisk eggs with milk. Add remaining ingredients and stir to mix well.
  3. Pour mixture into flan and bake for 35-40 minutes or until set.

Serve with salad or steamed greens.

Frittata can be served hot or cold a salad.
