Fresh Tomato and Chilli Pasta

Ingredients:

500g penne pasta
1/3 cup (80ml) olive oil
2 teaspoons crushed garlic
2 teaspoons bottled chopped chilli
4 medium ripe tomatoes (800g), chopped
1 cup chopped fresh flat leaf parsley
1/2 cup (40g) parmesan flakes

Directions:

  1. Cook pasta in large saucepan of boiling water, uncovered, until just tender, drain.
  2. Meanwhile heat oil in large frying pan, add garlic and chilli, cook stirring about 1 minute.
  3. Add tomato and parsley, stir in, remove from heat.
  4. Add sauce mixture to pata, toss gently, serve topped with cheese.
