Ingredients:
8 eggs, lightly beaten
half cup low fat milk
4 spring onions sliced
1 small zuccini sliced
8 cherry tomatoes halved (1 tomato chopped)
4 mushrooms sliced
200g lean ham
1 tablespoon chopped basil
2 tablespoons grated parmesan
freshly ground black pepper
Directions:
- Preheat over 10 170c. Lightly grease a 20cm ovenproof flan dish with a little olive oil.
- In a large bowl whisk eggs with milk. Add remaining ingredients and stir to mix well.
- Pour mixture into flan and bake for 35-40 minutes or until set.
Serve with salad or steamed greens.
