Chicken, Basil And Cabbage Salad

Ingredients:

700g skinless chicken breast – enough for 3 cups
4 cups finely shredded chinese cabbage
4 green onions, thinly sliced
1 teaspoon bottled crushed garlic
1/4 cup peanut oil
1/4 cup lime juice
2 tablespoons fish sauce
1 tablespoon sugar

Directions:

  1. Cook skinless breast chicken, shred to make 3 cups.
  2. Place chicken, cabbage, onion and basil in large bowl
  3. Combine garlic, oil, juice, sauce and sugar in screw top jar, shake well.
  4. Drizzle dressing over salad, toss gently to combine.
