Beef Strogonoff

Ingredients:

25g butter
2 onions, sliced
1-2 cloves garlic, crushed
750g rump or sirloin steak
2 tablespoons dry red wine
125g button mushrooms, sliced
1 teaspoon French mustard
150g natural yogurt
Salt and freshly ground black pepper
1 tablespoon each chopped thyme and parsley

Directions:

  1. Melt the butter in a large frying pan, add the onions and garlic and fry until lightly browned.
  2. Cut the steak into thin strips, add to the pan and brown on all sides.
  3. Add the wine and boil for 5 minutes, until the liquid has reduced.
  4. Add the mushrooms, mustard, yogurt and salt and pepper to taste and simmer for 5 minutes.
  5. Just before serving, stir in the herbs.
  6. Serve with fettucini pasta and greens
